Docs: link NIPs/kinds on first mention; gitignore screenshots/

Every first mention of a NIP or nostr kind in the README now links to
nips.nostr.com (NIPs) or nostrbook.dev (kinds). Add screenshots/ to .gitignore
(local gallery captures for the site).
